Peach Mango Pie Cups

Ingredients

Black Forest Loaf 2 slices
Cashew Paste
Chopped Cashew nut 60 g
egg 1 pc
Sugar 2 Tbsp
Lemon/lime zest to taste
Flour   2    Tbsp
salt to taste

Toppings:
Peach  1/2 slice
Mango  1/2 slice

Procedure

1.) Pre heat oven at 170 degrees celsius. Flatten the bread using a rolling pin.
2.) brush small size ramekins with butter or oil.
3.) Press into the ramekins the flattened bread and press it to the sides to form a tart like shell/cups.
4.) To prepare the cashew paste : In a bowl, combine Flour, cashew nuts, sugar, lemon zest, and egg. Season with salt.
5.) Pour the cashew nut paste into the cups and bake for 25 minutes or until frangipane is set. Cool for 15 minutes after baking.
7.) To prepare the toppings: In a bowl combine peach and mango together and mash it a litlle bit. Top the mango mix into the cups and serve.
