Gardenia Bangus Sisig with Mango Salsa Sandwich

Ingredients

For Bangus Sisig:
10 slices Gardenia Classic White Bread Thick Slice
1 large boneless fried bangus
1 piece red onion, chopped
1/2 cup scallions, chopped
1 Tbsp chopped chili
1/2 tsp ground black pepper
1 Tbsp soy sauce
1 tsp ginger, minced
2 Tbsp mayonnaise
1/4 cup unsalted butter
1 tsp garlic powder
1 tsp salt
1 Tbsp sour cream (for drizzling)

For Mango Salsa:
1 piece ripe mango
1/2 Tbsp celery, chopped
1 Tbsp white onion, chopped
1 Tbsp lemon juice
1 piece ripe mango
1/2 Tbsp celery, chopped
1 Tbsp white onion, chopped
1 Tbsp lemon juice

Procedure

Melt butter in a large pan. Add the onion and cook for 3 minutes. Put in the ginger. Stir and cook for 2 minutes in low to medium heat. Add the bangus and then stir. Put in the garlic powder, salt, ground pepper and soy sauce. Stir and cook for 5 minutes. Add the chicharon, scallions and chili. Stir to cook for 3 mins or more. Add the mayonnaise, stir. Transfer to a serving plate. Serve.

For the Mango Salsa: Cut the Ripe mangoes into small cubes. Add the rest of the ingredients.

To assemble: arrange the sandwich by layering first the bread at the bottom, paling the bangus sisig and topping it with the mango salsa.
